Saffron is the thin stigma of the Crocus sativus flower, a deep-red wisp that stands out against the light purple colour of the petals. With three stigmas per crocus and a flowering period that only lasts two weeks a year, it's no wonder saffron is so expensive. Many legends have surrounded the plant throughout history. To pick just one - it is said that in 15th century Nuremberg (a city in Germany that grew and traded the spice at that time) you could be burned or buried alive if you tried to sell fake or adulterated saffron.
